
Sushi Chidui
My main business is selling feed for farmed salmon. I originally made sushi in Sotokanda for over 10 years, but I gradually felt that I wanted to focus on the fish I use as ingredients, so I started a brand called Yakuzen Salmon in Hokkaido. I wanted everyone in Tokyo to be able to try that salmon, so I rented a stylish bar and started serving sushi there.
Why Bar?
Nowadays, when it comes to sushi, the style of having the chef choose your sushi like a course meal continues, but in the past, it seems that it was more common to have customers sit at the counter and choose what they liked while enjoying their sake. Furthermore, the origins of nigiri sushi, especially Edomae sushi, were originally served at food stalls. Each has its merits, but we serve it at the bar because we want people to enjoy it casually and deliciously. By the way, in America, sushi shops seem to be more commonly known as "sushi bars" rather than "sushi restaurants".The increasing number of sushi bar-style restaurants in Japan could be considered a reverse import.

Commitment to sushi
One of our specialties is our medicinal salmon. This salmon is raised on food that is also used in medicinal cuisine. Salmon raised in Hokkaido's high-quality environment and on medicinal food does not have the typical fishy smell, making it delicious for anyone to enjoy. We also carry other delicious ingredients from Hokkaido.
